Step 2. First fry in batches at 325 F for 5 minutes each, draining between batches.
Step 3. Rest all the blanched fries for at least 10 minutes.
Step 4. Raise the oil to 375 F and finish each batch for 2 to 3 minutes until golden.
Step 5. Salt each batch immediately and hold in a 200 F oven on a rack until all are done.

Hold finished batches on a rack in a low oven, never stacked in a bowl.
